The broth is cooked for more than 20 hours over low heat in small batches using fresh chicken bones. This helps to break down the connective tissue rich in collagen, chondroitin, glucosamine, and amino acids. To this broth, hand-deboned free-range chicken meat is added. At Weso, only the leanest part is selected, which has the highest biological value protein. This results in clean and very tasty meat.
